This is going to make me sound like an alcoholic, but on a truly special occasion, champagne with breakfast is magic.
I know the inclination here is to say that breakfast food plus a mimosa is pretty standard brunch fare, but I think it's more interesting to actually dive into the tasting notes here. The rich creaminess of soft scrambled eggs and warm butteriness of toast is perfectly-paired with an extra brut glass of bubbles. No orange juice needed; I find that there are champagnes light and bright enough to offset heavy, fatty elements of breakfast foods without adding extra acidity.
For those of you shaking your head about the time of day, remember that breakfast for dinner is the greatest dinner of all. And if I'm going to pair anything with my eggs, it's going to be champagne. #sorrynotsorry
