A couple of winters ago I spent Christmas with some family in Sweden. In Sweden, a popular snack to serve around the holidays is a thin gingerbread crisp (Pepparkaka) with blue cheese (ädelost) -- it sounds strange, but is absolutely wonderful. I had brought a sweet honeyed wine that I had picked up in Prague to my relatives in Sweden and it paired beautifully with the spice of the ginger cookies and funk of blue cheese -- I can only imagine that Tokaj or Sauternes would be amazing.
